Mini cheesecake muffins


Ingredients for 12 pieces:

120g shortbread

50g butter

450g cream cheese

150g low-fat curd

2 packs vanilla sugar

100g sugar

1 teaspoon lemon juice

2 eggs

Marmetube strawberry


  1. Melt butter in a pot, crumble cookies finely. Mix butter and crumbs until everything is soaked

  2. Evenly spread crumbs in 12 muffin ramekins covered with paper forms, press on slightly and place in fridge

  3. For the cheese mass first stir cream cheese until creamy. Add sugar, vanilla sugar and lemon juice and stir

  4. Add eggs one by one and finally mix in curd

  5. Spread cheese mass on the cookie surfaces and place a bit of Marmetube strawberry in the middle

  6. Bake muffins at 150° for 18-22 minutes (top/bottom heat)

  7. Fresh out of the oven the cheesecakes should still be wobbly in the middle

  8. Let everything cool for half an hour, cover with plastic wrap and place into fridge for at least 3 hours

  9. Once cooled, remove muffins from ramekins

  10. Decorate with Marmetube once more as needed before serving
