Blackberry danish pastry

Ingredients for 10 pieces

500g wheat flour

1 pack of yeast

25g sugar

1 pinch of salt

2 eggs

25g soft butter

250ml cold milk

125g farmers cheese

1 yolk

25g sugar

1 pack vanilla sugar

150g Marmetube blackberry


  1. Add flour and yeast into a bowl and mix

  2. Throw in all the rest and mix with a dough hook for about 5 minutes until you have a smooth dough. Cover and let it rise somewhere warm for 5 minutes.

  3. Den Teig auf einer leicht bemehlten Arbeitsfläche ausrollen und mit einem Tuch zugedeckt 45 Min. kalt stellen

  4. Roll out dough and cut into 12 small circles

  5. Spread water on the middle of the circles

  6. Stir farmer's cheese, yolk and vanilla sugar and pour it into the middle of the circles

  7. Bake pastries for 20 minutes at 200°

  8. Squeeze some Marmetube blackberry in the middle of the cooled pastries

  9. Sprinkle with rock sugar before serving
